Ingredients: 3/4 cup veggie stock 1 tbsp sesame oil 1/3 cup soy sauce 2 tbsp apple cider vinegar 1 - 2 tsp minced ginger Directions: Whilst your stir fry vegetables are cooking, mix these ingredients together in a bowl and then add to your wok or electric fry pan when you are ready. Let simmer for 5 - 10 minutes and then serve. |
Optional extras: This is a very basic soy based sauce from which you can add a number of ingredients. For example: 1. Basic sauce + curry powder + chilli 2. Basic sauce + tomato paste + cider vinegar + agave syrup 3. Basic sauce + peanut butter 4. Basic sauce + bbq sauce 5. Basic sauce + sweet chilli sauce |

Ingredients:
2 - 3 tbsp olive oil (for the pan) 4 tomatoes 1 stick of celery diced 1 small carrot diced 1 red capsicum 2 - 3 tbsp mixed italian herbs (or a mix of free basil, thyme, oregano & parsley) 1 - 2 tsp salt (to your taste) 1/2 tsp asafoetida (to your taste) optional: 1 tsp agave syrup (or other sweetener of your choice) Directions: Chop your veggies and heat all of the ingredients together to let the flavours blend together. Now purée the sauce and it is ready to put over some veggies to simmer for 5 - 10 minutes and then serve. Note: You can also try this directly in your blender if you wish to but you may need to adjust seasonings a little to your taste. You will probably only need 1 clove of garlic as well. if you are doing this sauce in the blender, try adding a few shakes of homemade bbq sauce as well for a little extra kick. |

Ingredients: 1 cup veggie stock 1/2 cup tomato sauce ** 4 tablespoons apple cider vinegar (to your taste) 4 tablespoons agave syrup (or another sweetener of your choice - to your taste) ¼ cup soy sauce 1 - 2 tsp grated ginger (to your taste) 2-3 tbsp cornflour ** We make our own tomato sauce with tomato paste + salt + agave syrup + water Directions: As your vegetables are cooking, add these ingredients to a small saucepan and warm so that you can stir everything together. Before the sauce thickens, add it to your already cooking veggies and let it simmer as it thickens with the veggies for a delicious sweet n sour dish. |

Ingredients:
⅓ cabbage 2 tomatoes 2 handfuls of raw cashew 2 tbsp finely chopped ginger 1/2 tsp asafoetida (to your taste) 1.5 tbsp garam masala 2 tbsp ground coriander 1 tsp paprika 1 - 2 tbsn salt (to your taste) 1/2 - 1 can coconut milk (to your taste) Directions: Soak the cabbage, tomato and cashews in hot water for around 20 minutes and as you are waiting for this, steam some vegetables for your curry. Now puree the cabbage, tomato and cashews together in the blender and add the remaining spices and ingredients (except for the coconut milk) and blend. Add salt to your taste as this brings out the curry flavour. Over an electric fry pan or a skillet, add a generous amount of oil and fry your curry paste to bring out more flavour, add your steamed veggies and then gently mix them around to create your curry. Now add your coconut milk splash by splash to your taste. |

Ingredients:
½ cup soy sauce 2 - 3 tbsp sesame oil (to your taste) 2 - 3 tbsp cider vinegar (to your taste) ½ cup veggie stock 5 tbsp peanut butter Directions: Put everything into a medium heavy-bottomed pot and heat gently over medium heat, whisking constantly. Let the mixture simmer for 3-5 minutes over low heat. if you want to make it thicker, just add peanut butter. You can use this sauce as a dipping sauce, either hot or cold or if you wish to as a nice sauce for putting over steamed veggies. |

Ingredients:
2 cups ketchup ** 1 cup water ** 2 tbsp tomato paste 1/2 cup apple cider vinegar (or more if you want more tang) 5 tbsp molasses 5 tbsp brown sugar (or agave syrup) 1/2 tbsp fresh ground black pepper 1 tsp asafoetida (to your taste) 1/2 tbsp ground mustard (or 1 tbsp dijon also works well) 1/2 tbsp smoked paprika (to your taste) 1 tbsp lemon juice 1 - 2 tbsp soy sauce 3 - 6 tbsp corn flour (depending on how thick you want your sauce) optional: chili powder ** We normally substitute 1 cup tomato ketchup with around 3 tbsp tomato paste + 1.5 tsp salt + 2 tbsp agave + 1 cup water and then we just omit the water from this recipe. Directions: In a medium saucepan, combine all ingredients. Bring mixture to a boil, reduce heat to simmer. Cook uncovered, stirring frequently until ready. it should take around 10 - 20 minutes or so. Please add more corn flour if you feel that it needs more thickening (but be sure to melt this into a small amount of water before adding to sauce). |
